Maria Shanley 4/24/2025 5:59 AMI recently changed my refuse hauler. I was provided information; as well as, new toters which explained how and what is recycled. I now have a better understand and have been recycling many more packaging than I was before. The most difficult is getting others to understand that NOT recycling is wasteful. -

I started recycling in 1985. I believe that each person's effort, as small as it may seem, will continue to make a difference in the world that my children and grandchildren (so forth) will live in. Reducing the mountains of dumping trash. -

My favorite meatless meal is a frittata with mushrooms, spinach and tomatoes.-

The recipe for a frittata. You will need a 12-15" frying pan. I use a stainless steel one. Ingredients: Small package of sliced mushrooms (or whole and you slice them yourself). One medium tomato and 1/2 bag (8 ox) of washed baby spinach. 6 eggs scrambled with spash of milk and 2 tbl spoons of parmesan cheese. Salt and Pepper to taste. I start by washing the vegetables and cutting the mushrooms into slices, the tomato into small bit side pieces and I use baby spinach (which doesn't need to be cut). I saute the mushrooms in olive oil and one pat of butter and once they are starting to turn brown, I add the chopped tomato. Cook them together until the tomato is getting soft. Then I add the spinach. This will wilt pretty quickly. I mix together 6 eggs with a spash of milk and add some parmesan cheese. I add that egg mixture right into the pan and start to let the bottom of the frittata cook. Once i see that it is bubbling in the middle, I remove it from the stove top and add this to the broiler in my over to quickly finish the top. You could also flip this frittata onto a plate (cooked side down) then use that plate (frittata on it) to flip the frittata back into the frying pan. Once this is done in the broiler, I take it out and use a spatula to gently release the side and bottom of the frittate and then it easier slides onto a flat dish. From their, I slice it into triangles (like a pizza). Serve it warm with toast and a side salad. Enjoy. -

Hand selecting all of the ingredients, herbs, and spices is like choosing which colors to paint on your canvas. There is something so enriching, so satisfying about really knowing everything you pour into each dish. If you wouldn't mind sharing the recipe, I would definitely be interested to explore something new.

I am also very grateful to be able to work from home. I go into the office two times a week usually, which is when I plan any in-person meetings. I am very productive when working at home and love taking small breaks to pet the cats and look at the birds with them outside.
