REFLECTION QUESTIONAt Home Whole Foods DietWhat benefits do whole foods and plant-based foods have on health and the environment?
Wendy Stultz (Riverbend Annex) 4/30/2024 9:51 AMIf we eat more raw, we require less energy or buildings or steps to produce our food. We also have more control over what we are actually eating. I know that preservatives and fillers add calories. But also things like corn syrup have had a huge impact on how we farm and use land.-
Brian Nelson (SWMC) 4/30/2024 4:11 PMI recently told a group that if they were to choose ONE thing to do that could make the most impact for both the environment and for one's health, it'd be to eat less meat. Don't try to become a vegetarian overnight, I said, as that's not sustainable...just work to expand your options and not making meat the center of your plate at every meal. :) -
Zoe Anastas (SWMC) 4/30/2024 11:59 AMAnd animals take more energy to produce as food sources. Cows need to eat on average 24 pounds per day! Instead, if we put some of that energy into plants, imagine how many people we could feed!

REFLECTION QUESTIONHealth & Well-being Reduce Refined SugarBefore you started this challenge, did you think you were 'addicted' to sugar? How do you feel now?
Wendy Stultz (Riverbend Annex) 4/29/2024 9:25 AMThis one was a tough one. I like my sweets on occasion. I have definitely reduced, but not eliminated refined sugars. This means more freshly made sweets, and more fruit or honey-sweetened items with less processed sugars. It takes more planning, which with my schedule means an overall decrease, which is probably a good thing, in itself.-

REFLECTION QUESTIONAt Home Needs Vs. WantsHow is creativity a necessary ingredient for practicing simplicity?
Wendy Stultz (Riverbend Annex) 4/29/2024 9:20 AMLooking at needs vs. wants means considering purchases or the impact. I am fortunate that if I need something, I can generally get it. I am also fortunate to know that materialism isn't worth it. I don't really care about "keeping up with" fashion or my neighbors or with current trends. That said, if a trend brings innovation that will positively impact my life, then I will get the item. I also have learned for myself that I would rather spend a little more to get an item that will last and be of better quality or more likely repairable than a cheaper item that will wear out or break more quickly. -
REFLECTION QUESTIONHealth & Well-being Mindfulness / Meditation PracticeWhat best helped you with your mindfulness or meditation practice? Did the practice become easier over time?
Wendy Stultz (Riverbend Annex) 4/29/2024 9:14 AMI have worked on mindfulness for quite some time. Lately, I have been using the How We Feel app to identify/name my emotions. This is helpful to see patterns, but also doesn't capture all of my experience. For example, I can say that I am tired or motivated. And I can put in notes. But I can't name physical reactions that cause emotions like pain or thirst, so I find that the emotions attached to those physical elements tend to be 'frustrated' (high energy/unpleasant) or 'meh' (low energy/unpleasant), when I might be feeling an otherwise pleasant emotion. I need to do more reading in his book to learn more. -
REFLECTION QUESTIONIn Our Communities Buy From a Farmers MarketDid procuring local ingredients impact the way you think about food or the meals you decided to prepare? If so, how?
Wendy Stultz (Riverbend Annex) 4/29/2024 9:07 AMI always ate from a farmer's market when I lived overseas-- there really weren't other options for veggies (if I wanted them not to have been displayed in the meat and cheese counter/window). I learned a lot about what was available locally and seasonally. The same here. I do like the freshness and variety, but it can be difficulty to eat what I buy while it is fresh, so I have to plan accordingly.-

Wendy Stultz (Riverbend Annex) 4/24/2024 11:52 AMI have been posting my list of gratitude most days. Sometimes it feels hard to share, since it is personal, but I think that gratitude is infectious and spreads the more it is shared.-
