    It's the last day of the Ecochallenge! I am beyond proud of this team and all we accomplished this month. It's amazing to see the growth from last year to this year and I hope to see even more growth next year. I will take the habit of daily gratitude with me after this challenge is over. It helps me to be more centered and have more grace for myself and others when I don't practice "perfect" sustainability.

    I'll be driving up the Brainerd/Nisswa area this weekend. Wondering if anyone has any tips for more eco-friendly road trips. I'm thinking whole food/compostable snacks for the drive...?

      One big thing I try to do before heading out is make sure we have enough beverages for the road (non-alcoholic of course!!). We always bring our own cups, a thermos of coffee and a gallon jug of water from home so we aren't having to purchase bottles or single use cups at the convince stores. Not only is it eco friendly, but it is also way cheaper to bring from home!

    I learned that 25-30% of food produced globally is wasted. It's sad to think that of that food wasted, US health care institutions generate an estimated 23,500 tons of food waste each year. That's a lot of resources and money that is wasted. They also mentioned Scope 3 Green House Gas emissions - I'd like to learn more about what that is.

      Oooh, oooh, oooh.....pick me! I am loving it!! After lunch, I walked out to the courtyard to check out the garden space today. I hadn't been back there before. I am so excited to get planting soon!!

    On thing I learned is that although medical supplies that are recyclable, many times is not recycled properly and thus contributing to the overall waste of most hospitals. One way I can make a positive impact is by encouraging my coworkers to compost and recycle their food scraps and cafeteria items properly. Education is key.

    I've loved seeing everyone's reflections the last day or so on this feed! One thing I'm doing to keep my clothing impact low is making sure I am not purchasing any brand new clothing and mending the clothes I do have. I shop on ThredUp (an online thrift shop).     Thank you to everyone who volunteered yesterday to clean up trash around St. Francis! And all of you who stopped by the Earth Day Fair! It was a great day full of community coming together to make small changes for a big mission!
